- Rava - 1 cup
- Saffron water - 2tbsp
- Cashew nuts - (5-8)
- Raisins / kishmish / dry grapes - 1 ts
- Sugar - 2 cups
- Cardamom powder - 1 tsp
Step-by-Step Guide to Perfect Rava Kesari:
- Heat a pan and add the semolina (rava). Dry roast it on medium heat until it turns aromatic and light golden brown. Keep stirring continuously to avoid burning. Remove the roasted rava from the pan and set aside.
- In the same pan, add ghee and heat it. Once the ghee is hot,add cashews and raisins and salute it untill they turn brown.Remove them and keep it aside.
- In the same pan, add water and boil it.
- Add the cardamom powder and saffron strands (if using) to the mixture and mix well.
- Add the sugar and mix them well.
- Now, reduce the heat to low and slowly add the roasted rava to the boiling water, stirring continuously to avoid lumps.
- Cook the rava untill its absorbs water and becomes thick.
- Decorate the roasted nuts and ghee to the kesari mixture and mix well.
